Our next post is a time-honored favorite for millions- especially in Mexico, Texas and California:
Huevos Rancheros
Its one of those well-balanced, simple dishes you get a craving for and is done with alot of variations.
Hey we are talking about breakfast! This is a basic recipe- very flexible- make a little or alot.
You can do it a couple different ways: frying, baking or even grilling! I bake as opposed to frying so much.
Sauce
In a small sauce pan on medium heat combine:
A little oil (olive, canola)
3-4 garlic cloves, smashed small or chopped
1 small or 1/2 medium white onion
Let the onions and garlic soften before adding tomato.
1 can of tomatoes or 2-3 medium-sized tomatoes, chopped to 1in. pieces and drained
1-2 peppers, (jalapeno, japones or even serrano but I like jalapeno)
Pre-heat oven to 350 degrees
Oil an oven-safe plate or pie dish
Lay in a fajita size tortilla (8-10 inches depending on your pan :-)
Crack open two eggs on the tortilla and bake 10-15 mins or until yokes are just set.
Pile your plate! Pour the sauce on top of the eggs... goes great with black beans and rice on the side.
Slice an avocado and add cheese please!
