Unique Gluten Free Appetizer Idea - Sweet Potato Pizza

Sweet Potato Pizza?

Hmm...

 Think Loaded Sweet Potato Fries and we're on the right track!

This is a very quick, novel, and delicious way to kickstart an evening.

Crisp up enough sweet potato steak fries (or other style, to your liking), on a large greased or sprayed sheet pan. The steak fries hold their shape better under the weight of extra toppings.
Crinkle-cut fries can get a tad soggy.

This should be 1.5 - 2 lbs of fries ideally.

Follow instructions or preheat the oven to 400 degrees F, baking them on both sides for at least 6-9 minutes. While the fries are crisping up, make the topping in a skillet or sautoir:
Heat a Tbsp butter or light oil on medium heat and add:

1 - 1 1/4 cup (8-10 oz) red onion, medium dice (1/2 inch)
1/2 cup or 4 oz each red, yellow, and orange bell peppers, diced 1/2 inch
Saute these until just tender and onion is beginning to carmelize.
Stir in
6 oz of Cuajada Central American soft cheese cubes, crumbled or small diced
They don't really melt, but soften and add texture and flavor.
Sprinkle with 2 teaspoons each of oregano and thyme if  you like, season with salt and pepper to taste. I added a dash of tumeric, because I just like tumeric.

When the fries are crisp on the outside, take them out of the oven,
Have out a large bottomed casserole dish or 9x13 pan:
You will present the dish in this hot pan - (watch your mittens!)

Spread evenly over the potatoes:
1 1/2 - 2 loosely packed cups, (4-6 oz by weight) arugula or coarsely chopped dandelion or beet greens
Drizzle 1 cup salsa verde over the greens,
Sprinkle 1 cup of shredded cheese over the salsa verde: pepper jack, monterey jack, mild cheddar or mozzarella will do. (Or mix them! Yum!)
Top with the warm onion and peppers and finalize with 1 more cup of the shredded cheese!
Optional: a swirl of Sriracha Picante (chili and garlic sauce) adds a nice kick and some color.

Broil for just 2 minutes, or enough for the cheese to bubble up a little. Keep an eye on it!
The cheese will brown quickly!
Enjoy the sweet, spicy, and savory flavors--- complex is sometimes a good thing, yes?
